Drunken Salmon

Ingredients:

120ml (4fl.oz) Scotch whiskey
120ml (4fl.oz) freshly squeezed orange juice
4 tbsp soy sauce
5-6 tbsp olive oil
1 tbsp pepper
1 tbsp salt
2 cloves garlic, crushed
1kg (21/4lb) salmon fillet, skin on

Preparation:

  1. In 23x32cm (9 x13-inch) glass baking dish, whisk together whiskey, orange juice, soy sauce, olive oil, pepper, salt and garlic. Place salmon fillet in marinade, skin-side up. Cover with plastic wrap and chill for 6-8 hours.
  2. Remove salmon from marinade and place on cedar plank, skin-side down. Place on preheated grill or barbecue and cook over medium-high heat, with barbecue lid down, for 10-13 minutes or until salmon just flakes with a fork. Be careful not to overcook.

Makes 8 servings.

 

Salmon Recipe - Drunken Salmon

 

 

GI Diet Chilli

Preparation and cook time 60 - 120 mins.

Ingredients

  • 240g extra lean beef mince
  • 2 chopped green peppers
  • 2 finely chopped cloves of garlic
  • 1 large sliced onion
  • 1 can (400g) tomatoes
  • 1 can haricot beans
  • 1 can red kidney beans
  • 2 tsp olive oil
  • 1/2 tsp cayenne
  • 1/2 tsp salt
  • 1/2 tsp basil
  • 450ml water Instructions

Preparation:

1. Saute onion and garlic in the oil in a large saucepan intill tender.

2. Brown the minced beef, drain off any fat.

3. Add the tomatoes, peppers, cayenne, salt, basil and water and bring to the boil. Leave the lip off the pan, and simmer until it has reached your preferred consistency (45mins - 2 hours).

4. Before serving add the beans.
